Eye Fillet
It is the prized and most tender muscle in the whole animal. This meat is very tender and can be roasted in a hot oven, or cut into thick steaks for grilling or frying.
Scotch Fillet
This cut has a good covering of fat, which keeps it moist. They are full of flavour and are wonderful for roasting and grilling.

Sirloin Steak
Also known as porterhouse, the sirloin can be cut into a large piece for roasting or can be sliced into steaks. Extra thick cut steaks are also called 'New York Cut'. This meat is tender and is perefectly suited to grilling, BBQ and roasting.
T-Bone
The best of both worlds. Sirloin on one side of the bone, eye fillet on the other. The bone adds flavour and stops the meat from drying out.
